I’m Charlie, a fun-loving French-Maltese chef.

I found my way into gastronomy while working at the family restaurant in Malta.I then moved to Bristol,UK to obtain my NVQ qualification in pastry and from here my love for serving up delicious, healthy, and sustainable food has blossomed.

I’ve worked everywhere from Australia to North America, ranging from Melbourne’s fine-dining to Berlin’s brunch cafe’s. I’ve also worked on private motor yachts in the Mediterranean and in the high-pressure ski resort kitchens of the alps. These experiences have shaped me into an adaptable chef, ready to embrace a challenge. 


Whichever kitchen I’ve worked in, I’ve always been deeply connected to music. I grew up with Led Zeppelin and Santana blasting through the house, introduced to me by my hippie parents. More than anything, music is a means to connect and recenter myself.

My third love is the environment. I love all the beauty this planet has to offer. I believe we can save our planet by changing our diet, but not at the cost of taste and satisfaction.
